Still working on catching up

OK so this is a LO that has been in need of scrapping for a LONG time. We spent so many winter days enjoying ourselves at the children's museum in Ohio that it felt like a black hole in the scrapbook! So finally at last it is on paper and I love how it turned out. All the little embellishments have meaning and I love that!

New LOs -Finally

Ok so for the four people who read my blog (you know who you are!) I have finally started scrapping again. Its been months, seriously months since I've truly scrapped for the memories for the joy for the photos. So I'm slowly getting back into it (I still have a lot of IRL (in real life) projects to do though) check back here again for my posting! And yes these are still from two years ago. Seriously I will get that year completely done and I can move on to more recent events...like 2009!!! I'll get there and will even try to throw in a current pic or two, just to keep you guessing!

Lego Indiana Jones Cake

So yesterday was big E's birthday and we had friends over for dinner and cake. I made the cake to look like the characters and scenes from his Lego Indiana Jones game (which he is completely obsessed with right now). It took days of prep and then days to make it, but I do love how it turned out! And he loved it so that is all that matters!

Potato Ham Soup - YUM!!!

I'm going through a soup phase and this one is nice and hearty and oh so yummy! I totally copied and pasted an online "friend's" recipe, but can't link you to it since she's a "closed" blogger for privacy reasons. So I hope she doesn't mind me sharing with you all!

I made it last night exactly according to the directions and wow..C and I loved it! The boys...well give them time! E still has to get over his soup aversion to appreciate this, the boy is crazy I tell you. And K well you never know what he's going to like or not like from one minute to the next. But he did enjoy dipping his bread in it, so there's hope!

POTATO & HAM SOUP

3 1/2 cups peeled & diced potatoes (I love Yukon Golds!)
1/3 cup diced celery
1/3 cup diced onion
3/4 cup diced cooked ham *
3 1/4 cups water
2 TBSP chicken bouillon granules
salt & pepper to taste (about 3/4 teaspoon each)
5 TBSP butter
5 TBSP flour
2 cups whole milk

* I had pre-cooked boneless ham steaks on hand. I wanted them to have a richer, smokier flavor before using them in the soup so I fried my diced pieces just for a few minutes.

1. In a stockpot, bring the potatoes, ham, onion and celery to a boil. Cook until potatoes are soft (10-15 minutes). Stir in chicken bouillon granules, salt & pepper.

2. In a separate saucepan, melt butter. Whisk in flour. Start whisking in milk until it's all incorporated and the mixture is smooth. Stir over medium heat until thickened (4-5 minutes).

3. Stir the milk mixture into the stockpot. Cook until heated through. Best if served immediately.

Now go make some soup! And it makes great leftovers!
